Sake pasteurized once in spring, aged through summer, and released unpasteurized in autumn when air temperature matches cellar temperature. Hiyaoroshi is the most anticipated seasonal sake release, prized for its rounded, mellow character.

The name hiyaoroshi combines hiya (cold/room temperature) and oroshi (wholesale/send out), referring to the historical practice of shipping sake from the brewery at the cooler temperatures of autumn. The single spring pasteurization stabilizes the sake for summer storage, while the absence of a second pasteurization preserves some freshness and enzyme activity. Over summer, the sake matures: rough edges smooth, flavors integrate, and a harmonious roundness develops. Hiyaoroshi appears in September and sells through November. It pairs brilliantly with autumn foods — sanma (Pacific saury), matsutake mushrooms, chestnuts, and root vegetables.
