Pure rice sake made with only rice, water, koji, and yeast — no added brewer's alcohol. The term junmai means 'pure rice' and indicates a sake that derives all its character from the rice and fermentation alone.

Until 2004, junmai required a polishing ratio of 70% or below. That requirement was removed, so today junmai can use any polishing ratio as long as no alcohol is added. Junmai styles tend to show fuller body, richer umami, and more pronounced rice character compared to aruten (alcohol-added) styles. They are particularly versatile with food, pairing well with a wide range of Japanese and international cuisines. When served warm, junmai often reveals deeper, more complex flavors.
