Wakayama occupies the southern tip of the Kii Peninsula, where the Kumano mountains receive Japan's highest annual rainfall on the Pacific side, feeding rivers with abundant, extremely pure soft water. The mild maritime climate with minimal frost creates warm fermentation conditions that brewers manage carefully. This same lush, rainy environment that perfects Wakayama's umeboshi plums and soy sauce also provides the pure water base for its small but distinguished sake brewing community.
