Yamaguchi occupies the western tip of Honshu, where the Nishiki River drains clean granite-filtered water from the Chugoku Mountains to the Sea of Japan coast. Winters are milder than Tohoku but cold enough for quality fermentation without heavy refrigeration investment. The relatively humid maritime climate influences koji development, and abundant pure water has enabled Dassai's pursuit of extreme rice polishing ratios.
