Tamanohikari Junmai Ginjo Shuho is produced in Kyoto Prefecture by Tamanohikari Sake Brewing, a house known for reviving additive-free Junmai brewing. Made from Yamada Nishiki milled to 60%, it presents balanced fruity and rice-driven flavor supported by an acidity of 1.35 and an amino-acid level of 1.2. A Sake Meter Value of +3 at 15.5% alcohol yields a dry, well-rounded ginjo. Kyoto's Fushimi district, with its soft groundwater, is one of Japan's two great historic brewing centers.
