Aromatic and fruit-forward, Nanbu Bijin Junmai Daiginjo opens with high fruity and floral character supported by a clean, low amino-acid body of 0.9. It is brewed by the Nanbu Bijin brewery in Iwate Prefecture from Yamada Nishiki milled to 40%, comfortably within the Junmai Daiginjo grade. A Sake Meter Value of +4 and an acidity of 1.15 yield a dry yet delicate finish at 16.5% alcohol. The brand takes its name from the Nanbu region of northern Japan, home to the Nanbu Toji, one of the country's most influential guilds of master brewers.

Nanbu Bijin's flagship Junmai Daiginjo exemplifies the refined, elegant style of Iwate's Nanbu Toji tradition. Yamada Nishiki polished to 40% yields delicate aromatics of melon and white flowers with a precise, mineral finish. This internationally acclaimed sake has won gold at IWC, Kura Master, and numerous domestic competitions.
