Brewed by Tatenokawa Brewery in Yamagata Prefecture from Dewa Sansan milled to 50%, it pairs a low amino-acid level of 0.95 with an acidity of 1.15 for a clean, delicate palate at 15% alcohol. Dewa Sansan is a Yamagata-developed sake rice, and Tatenokawa produces its entire range at the Junmai Daiginjo grade. Seiryu, meaning 'clear stream,' sits toward the sweeter, more delicate end of the lineup.
