Asahi Shuzo in Iwakuni, Yamaguchi is the creator of Dassai, the sake brand that transformed the global perception of premium Japanese sake. CEO Sakurai Kazuhiro eliminated all grades except Junmai Daiginjo and invested in data-driven brewing without a traditional toji. Dassai 23, polished to a remarkable 23%, became the world's most recognized sake brand.
