Daishichi in Nihonmatsu is Japan's foremost advocate of the kimoto method, producing their entire range using this traditional natural lactic acid starter. Their Minowamon Junmai Daiginjo is considered one of the finest kimoto expressions ever made. Daishichi's sakes have remarkable structure, umami depth, and aging potential that distinguish them from modern sokujo styles.
