Tsukasabotan (Peony Chief) in Sakawa is one of Kochi's oldest and most prestigious breweries, using pristine water from the legendary Niyodo River — one of Japan's clearest waterways. The brewery's dry, crisp sakes perfectly suit Kochi's famous okyaku banquet culture. Tsukasabotan Senchu Hassaku, named after a samurai reform manifesto, is their celebrated flagship.
