気候

Saitama occupies the flat Kanto plain to the northwest of Tokyo, but its western border rises sharply into the Chichibu limestone mountains, where spring water filtered through karst geology emerges with distinctive mineral qualities. Cold, dry northwest winter winds from the mountains — the famous karakkaze — create reliable low-temperature conditions for fermentation. The combination of fertile rice plains and mountain water sources supports over 30 active kura.
