Nanbu Bijin's Tokubetsu Junmai is the brewery's workhorse expression and a superb introduction to the Nanbu Toji style. Local Iwate rice polished to 55% and the region's pure water create a clean, balanced sake with moderate umami, gentle acidity, and a dry, refreshing finish. Excellent across a wide temperature range, it pairs beautifully with both Japanese and Western cuisine.
