Chiyomusubi (Eternal Bond) in Sakaiminato, Tottori (Shimane border area) uses Mt. Daisen's pristine soft water and locally revived Goriki heritage rice. The brewery has championed this nearly-extinct rice variety, producing robust, characterful sakes with deep umami. Their collaboration with the manga 'GeGeGe no Kitaro' (set in Sakaiminato) adds playful charm to serious craft.
