The first sake that flows from the press before significant pressure is applied, meaning 'rough run.' Arabashiri is typically bolder, more aromatic, and slightly rougher than the refined middle portion, with a lively, assertive character.

Arabashiri emerges under minimal pressure as the moromi's own weight forces liquid through the filter. It often contains more suspended particles and shows a more aggressive, youthful personality. Some brewers bottle arabashiri separately as a limited seasonal release, prized by enthusiasts for its raw energy and expressiveness. The contrast between arabashiri and the smoother nakadori (middle run) or heavier seme (final press) demonstrates how different fractions of the same moromi can produce distinctly different sake experiences.
