The oldest pure sake rice variety still in cultivation, discovered in Okayama Prefecture in 1859. Omachi is the genetic ancestor of many modern sake rice varieties including Yamada Nishiki, and produces sake with rich, complex, and deeply layered flavors.

Omachi was nearly extinct by the 1970s but was revived by passionate brewers who valued its unique flavor contribution. The rice produces sake with pronounced umami, a round mouthfeel, and complex earthy and herbal notes. It is particularly popular among sake enthusiasts who appreciate depth over delicacy. Omachi fans are so devoted that the variety has its own tasting event, Omachi Summit. Nearly all Omachi is grown in Okayama, and the best lots come from the Takashima district.
