Clima

Oita occupies the eastern face of Kyushu overlooking the Bungo Channel, where volcanic activity from the Aso-Kuju range has created an extraordinary network of geothermal springs. Breweries draw water not from hot springs but from the cold volcanic aquifers flowing beneath the same geology, yielding mineral-balanced water with distinctive character. The Kunisaki Peninsula's terraced rice fields — a UNESCO Globally Important Agricultural Heritage System — supply quality brewing rice in a mild coastal climate.

Sobre

Oita Prefecture, famous for its abundant hot springs in Beppu and Yufuin, also has a respected sake tradition. The Kunisaki Peninsula's rice terraces are a Globally Important Agricultural Heritage System, and breweries like Nishinoseki and Chitosemidori draw on volcanic spring water. Oita's sakes tend toward clean, light styles that bridge the sake-shochu divide in Kyushu.
