Brewed by Sudo Honke in Ibaraki Prefecture, Sato no Homare Junmai Daiginjo is milled to 35% from Yamada Nishiki rice. A near-neutral Sake Meter Value of +1 and a low amino-acid level of 0.85 give a clean, balanced palate, while fruity and floral aromatics dominate the nose. Acidity measures 1.15 at 16% alcohol. The 35% polishing ratio places it firmly in the Junmai Daiginjo tier, the highest of the milling-defined grades, and reflects the labor-intensive rice preparation such premium sake demands.
