Asahi Shuzo in Nagaoka, Niigata is the creator of Kubota, one of Japan's most iconic sake brands. The brewery pioneered the tanrei karakuchi (light and dry) style that defined Niigata sake in the 1980s. Using pristine snowmelt water from the Asahi mountain range and Gohyakumangoku rice, Kubota set the standard for clean, refined sake.
