Hekiju, meaning Jade Life, is Kubota's yamahai-brewed Junmai Daiginjo, combining the traditional depth of yamahai fermentation with the range's signature clean elegance. Richer and more structured than the sokujo-brewed Manju, it shows subtle lactic complexity, rounded umami, and a long finish. Brewed by Asahi Shuzo in Niigata from Gohyakumangoku polished to 50%, it reaches 15% ABV with a sake meter value of +2 and a moderate acidity of 1.3. Its flavor is fruit-forward with a light sweetness, and it is often served slightly warmed to bring out its depth.
