Developed in Nagano Prefecture in 1978 through gamma-ray mutation breeding of Takane Nishiki, Miyama Nishiki thrives in cold climates and is the third most planted sake rice nationally. It produces clean, crisp sakes with bright acidity and a lighter body than Yamada Nishiki. Widely cultivated across Tohoku and Chubu, it is especially popular in Akita and Yamagata.
