Brewed by Miyasaka Brewing in Nagano Prefecture, Masumi Okuden Kantsukuri is a Junmai sake milled to a 60% polishing ratio from Miyama Nishiki rice. Its slightly negative Sake Meter Value of -2 places it on the gently sweet side of the scale, while an acidity of 1.55 and an amino-acid level of 1.45 give a savory, rounded body. At 15% alcohol the palate leads with rice and umami character before a dry finish. The name refers to the brewery's cold-season 'secret tradition' brewing, a practice rooted in Nagano's cold-winter alpine climate.
